This Winter Detox Salad is the perfect mix between refreshing and comforting, ideal to feel lighter after the holidays!
Ingredients:
Salad
- 2 cups chopped butternut squash
- 2 cups lettuce (any kind except iceberg)
- 1 avocado, sliced
- 1/4 cup red onion, chopped
- 1 tablespoon of sesame seeds
- 1/4 cup walnuts, chopped
- 1 tablespoon grapeseed oil
- Sea salt and cayenne pepper, to taste
Dressing
- ½ cup olive oil
- ¼ cup key lime juice
- 1 teaspoon agave syrup
- Sea salt and cayenne pepper, to taste
Instructions:
- Place your squash pieces on a baking tray, add a little grapeseed oil, and toss together with some sea salt and cayenne pepper until every piece is coated.
- Roast for 25-30 mins at 350°F until golden and tender when pierced with the tip of a sharp knife.
- In a small bowl, whisk together the dressing ingredients.
- Place all the salad ingredients in a large bowl and coat with dressing. Let the flavors marinate for at least 20 minutes before eating.
