- 1 cup cherry tomatoes
- 2 (seeded) cucumbers
- 1 red onion
- 8 small basil leaves
- 1 tbsp olive oil
- 1 tbsp approved herbs
- Sea salt and cayenne pepper, to taste
- 1 key lime
- Chop the cherry tomatoes and seeded cucumbers into equal-sized chunks and slice the onion, then transfer them to a bowl. Add the basil and herbs.
- Pour the olive oil and key lime juice over the vegetables.
- Sprinkle with sea salt and cayenne pepper. Let marinate in the fridge for at least 30 minutes.
