Mother's Day Mango Pudding

Creamy, sweet, sour, crunchy, smooth... this is an absolutely perfect Mother's Day breakfast or dessert, and it takes only a few minutes to put together.

Ingredients:

  • 1 ripe mango, cubed
  • 1 ripe avocado
  • 1 ripe burro banana
  • 1 tablespoon agave syrup
  • 1 tablespoon chopped walnuts

Instructions:

  1. In a food processor with an "S" blade, process the avocado, one burro banana, half the mango, and agave syrup until a very smooth and creamy consistency is achieved.
  2. Top with sliced banana, the remaining cubed mango, and chopped walnuts.
  3. Drizzle with just a tiny bit of agave syrup, if desired.
